Vegetarian Hot and Sour Soup

Ingredients:
  • 20g straw mushroom, shredded
  • 20g bamboo shoot, shredded
  • 20g fungus, shredded
  • 20g tofu, shredded
  • 20g carrot, shredded
  • 20g mangetouts, shredded
  • bowl of water
  • ˝ egg, well beaten
Seasonings (set 1):
  • 1 tbsp Yeo’s Hot Bean Sauce
  • ˝ tsp Yeo’s Pure Sesame Oil
  • ˝ tsp Yeo’s Dark Soy Sauce
Seasonings (set 2):
  • 2 tsp Chinese vinegar
  • 2 tsp corn flour
  • 2 tsp water
  • ˝ tsp ground pepper
Preparation:
  1. Cook all the ingredients (except beaten egg) and seasonings (set 1) with water until boiled for 2 minutes.
  2. Mix seasonings (set 2) and pour into the soup and cook for another 1 minute. Add the beaten egg and serve.
